Hello all its the Weekend yippee!
Can you believe there are now only 10 days left in January??!! Crazy.
Do you have any plans this weekend that are helping you on your healthy journey?
DD and I went to the market last night to buy ingredients to make up a bunch of meals for her freezer (and a few for mine) to help keep her on her healthy journey during the busy LAST semester of SENIOR year!!
WOWZA.... I cannot believe she is finishing college! As of yesterday, she graduates in exactly 4 months! Anyhow, she'll be commuting to Boston M-W-F for her internship and taking classes Tu-Th, AND working in the wet lab.... so she will be crazy busy... this semester will be FLYING by! Anything we can do NOW to help keep life from getting out of control during these busy, busy days will be helpful.
@pjlla what was the cookbook you recommended? any recommendations anyone - cookbooks, blogs etc? Looking for inspiration
I hadn't mentioned a particular cookbook..... just some random recipes from a WW who is kind of pseudo-famous on Instagram and on WW Connect. But have you ever checked out our recipe thread! The WISH weight loss challenges (originally known as the WISH Biggest Loser challenges) has its own recipe thread! It has been neglected lately, especially since the original thread owner has stepped away from our challenges, but I still post there occasionally. I'm planning to add that meatball recipe I mentioned the other day and I'll post a link when I get it there.
That being said.... a few of the cookbooks I really like are from SkinnyTaste, Hungry Girl, and Weight Watchers. Sure, not every recipe is a winner.... and I pick and choose carefully to avoid lots of franken-foods.... but I've found recipes I love in all of those books. Hungry Girl has a newer cookbook (Clean and Healthy??) that is a HUGE improvement over her past recipes that included a lot of what I would consider "junky diet foods". My FAVORITE place to find recipes these days, however, is PINTEREST!

Happy Sunday morning friends! Didn't post results Friday but holding tight to my loss for the month.... so while I'd love to lose a bit more, no complaints at maintaining my 100% for January!
I was hoping to NOT go out today, but DS asked me to bring him a few things yesterday and I forgot to grab some of them.... nothing vital, but I know he'd like me to bring them today.
Today's cooking will include chicken cacciatore, lentil soup, shepherd's pie topped with cauliflower mash, light chicken divan, curried chicken, and a new recipe called chicken and broccoli bubble up (sounds similar to the divan but with biscuit dough included).
Anyhow.... I've got homemade turkey stock simmering on the stove already. Next up I throw the chicken cacciatore ingredients into the crockpot and start dicing up the veggies for the lentil soup, broccoli dishes, and the curried chicken. Then I'll brown the hamburg and cook the cauliflower for the shepherd's pie. That should be the MAJORITY of the prep.
Coffee cup is empty, so time for a refill and to get the crockpot going. I'm the only one awake so far, so I've been trying to be quiet, but time to get this day moving!................P
