What are the 3 must do non-ride attractions at each park?

Good question!

MK Festival of Fantasy parade, Happily Ever After fireworks, and the piano player near Casey's

EPCOT So many entertainment options in the park, and many of them are really great, but to pick just 3, I would say Illuminations for sure, the band in the UK, and the fountain show after dark, on the way out of the park. It is beautiful when it is lit up at night!

DHS Fantasmic, Star Wars fireworks show, and the Little Mermaid show.

AK tough one here, for sure Pandora after dark is a must see, Festival of the Lion King is my favorite show in all of Disney World, and then I would say the Tree of Life awakenings. I gotta say though, Nemo is a great show too . . . very hard call there.

DHS - pulling the rope in the well in front of Indiana Jones ;)
MK - Tom Sawyer Island, SoTK, the Pirate one as well
AK - the explorer badge thing

Epcot - World Showcase (it's our favorite part of Epcot), Behind the Seeds tour (we've done it twice, it's fantastic!)
AK - The two animal trails, Pandora at night
HS - March of the First Order, Kylo Ren meet and greet
 
Don't miss the street live entertainment. Throughout World Showcase in Epcot it's most predominant. For, example, there are are gymnasts in China and a juggler in Italy. There's a schedule for times in the parks. Magic Kingdom has the barbershop quartet. My favorite in Animal Kingdom is DeVine. Hollywood Studios has a Star Wars show.

Make sure you get fastpasses for the rides; otherwise, there are very long waits on the popular rides. Fastpasses can be done 60 days ahead of time if you're an onsite guest and some of the Disney Springs resorts are included here. The rest of offsite resorts get 30 day advance reservations for the rides.

AK - Festival of the Lion King, Nemo the Musical, Tough to be a Bug (show is cute but this is a must for the queue - plan time and walk slow you get right up to the tree and there are sooo many great pictures)
EP - Voices of Liberty, Festival items if one is going on, if you have adults try to get to UK Canada area around 5pm as the bands start there great to grab a drink and listen for awhile
HS - Beauty and the Beast Show, Little Mermaid Show, Fireworks (both the Star Wars and Fantasmic)

Thank you. Where is the best viewing for the parade , and how long in advance should we give to wait. We are ok with not having a curb seating and we're two adults with no kids.
 


MK — Country BEAR jamboree, Enchanted Tiki Room, ride the TTA (people mover)
Epcot — walk out the international gateway entrance and rent a bike and loop around beach club, boardwalk, yacht club & swan/dolphin areas which would be worthwhile since you are from CA
HS — have a snack and watch the trolley car singers roll by..
AK — walk the trail that surrounds the tree of life really cool.
 
MK - Carousel of Progress, Tiki Room, Country Bears, Hall of Presidents, Mickey’s Philharmagic, and Festival of Fantasy Parade.
Epcot - Club Cool, walking around the countries and seeing the movies, and Illuminations.
AK - walking the main and smaller trails, Tree of Life Awakenings, and Rivers of Light.
DHS - Muppets, Indiana Jones, One Man’s Dream, March of the First Order plus Star Wars Shows, Frozen, and Fantasmic.
 
AK: Walk path behind Tree of Life, and also Pandora, and the projections at night

MK: Does CoP count as a ride? If no, that and Philharmagic and ETWB just for the magic mirror effect.

EP: Eat things at the countries. Upstairs at the Seas?

DHS: Frozen singalong

HS: Beauty and the Beast musical, Fantasmic
MK: Hall of Presidents, Country Bear Jamboree
AK: Lion King show

Responding to a PPs question, I like to watch the Festival of Fantasy parade in Frontierland, kind of across from Pecos Bill's, toward the river.

Lots of good suggestions from others. I just want to say, the Lion King and Nemo shows at AK are two of my favorite things at WDW.
