Disney recipes modified

I think pollo a las rajas from san angel inn could be made light. Sub out or omit the chorizo and use light sour cream, low fat cheese and maybe light evap milk instead of half and half. I have been craving it so if I try it I will post how it turns out.

hmm There is an easier Dole Whip on the Buzzfeed list but I don't use Cool Whip anymore (health concerns) so I'd have to make my own whip first This is doable but makes it less easy ;) I guess the real question is - which one would taste most authentic?
