Help for family of 8

Going in Feb. for 8 days with a family of 8 and I have some questions for the group. We all, most likely, be on the same reservation. Do we all have to have the same fast passes? Am I correct in saying that means everyone is on the same dinning plan? Also, 2 members of the group may not want to go to a park each day, can they elect to have a shorter park ticket than the remainder of the group?
 
You do not have to all have the FP+ no matter how you book, just select the names of the list you are booking for each FP+. We often split ours up.

If you are all on the same reservation and have a package (which you must for dining plan) then YES, everyone must book the dining plan.

Since above sounds like you will have a package, then YES you must have the same ticket. You have the option of booking the smallest ticket need for all and then just adding days on arrival ... but you won't be able to make advance FP+ for those days. Price the difference as since you have a long trip it may not cost that much for those those 2 and it gives you FP+, and them the option if they change their mind or want to go even just for fireworks or something.
 
Fastpasses can be pick for whoever wants to ride, not the whole group.
Dining is for everyone on the reservation with tickets.
If the whole party is under the same room and dining, they all need to buy the same amount of days of park tickets. I would recommend to skip dining plan, and let each member choose the number of park tickets they are going to use, and paid out of pocket for food, unless you got it for free, dining plan doesn’t save you money. Do some numbers, get a room discount only.
 
With a party of 8, what accommodations are you planning? To be on 1 reservation, all guests would be in the same room - which means booking one of the larger DVC villas. If you are looking at a regular resort reservation, you could split into 2 rooms, in which case the guests in room 1 would not need to have the same ticket days as the guests in room 2. You might be able to split that way.
