I’m planning a solo trip early next year and want to do it during a low crowd time with nicer weather. Which would be a better time to go? January or February? And would the savings be enough to book into a moderate resort?

Weather can be hit or miss in January, February is a bit more stable.

Agreed with previous poster - if more consistent weather is your goal - February.

Weather seems to be more stable in February, but crowds should be comparatively lower both months. I would check to make sure you aren't heading there for race weekends (WDW Marathon and Princess race weekends are in Jan/Feb).
