I really like this new recipe list. It looks great. Thank you so much for putting this together, Rhonda.

All of you moderators are doing such an outstanding job for the W.I.S.H. board.

And don't we have a great group of W.I.S.H. helpers here that have contributed so much. Like the weekly weigh-in, recipes, and clippie info stuff, and more. I don't want to leave anyone's name out. You know who you are...lol.

Now if I could just get back to basic low carb Atkin's Diet of 15 grams of carbs per day, instead of being addicted to these new Russel-Stover Suger Free Pecan Delight chocolate covered caramel and pecans. And the Atkin's low carb ice cream. I need to cook some of these low carb recipes, but I'm just plain lazy...lol.

Here I am searching the web for the very best SBD low carb recipes and here they are, right under my nose! I am so ashamed of myself. Shoulda known that this group would have everything I want or need. No need to go elsewhere. (banging my head against the wall in shame)

After losing over 80 pounds in 2002 I 'only' managed to maintain in 2003. Am down about 7 pounds from the first of the year and am bound and determined that this will be the year that I make my goal.

In an effort to accomplish this I booked 11 days at DW for mid May. Figure all that walking should help. Not worried about the food as I have never gained an ounce at DW and ate any darned thing I wanted. So many wonderful distractions.

Have to add that I have been making the Cauliflower Taters for a year or so and have come up with my own touches. I add dry ranch dressing, FF cream cheese, shredded cheeses, bacon bits, minced garlic and all sorts of seasonings. (not all at one time LOL) I have come to quite enjoy it and really cannot tell the difference anymore. So satisfying to see a big pile of white fluffy on the plate with my veggie meatloaf. Makes me feel like I am eating normal food again.

Anyone who lives near a Ruby Tuesday might want to check it out. They have the most awesome full low carb menu, complete with appetizers, entrees, side dishes and even a low carb cheesecake (6 g). Not just a hunk of meat and soggy broccoli for me anymore! The prices were even reasonable. Hope other places follow suit.

I will try to dig out some of my favorite recipes and post them later.

Thank you for the work and congratulations Nativetxn. You sure are doing good and I thought you looked great when I last saw you before the diet.

Hey Linda! Would you put together a recipe for the mashed cauliflower that you make? That would be so great to add here.

I love Ruby Tuesday but I won't eat their creamy cauliflower because it contains <b>11</b> grams of carbohydrates :earseek:
 
Hi there Katholyn, I am afraid that in my excitement over the low carb menu I did not notice the carb count of the mashed cauliflower or the creamed spinach! I just assumed they were prepared like I do at home. The cheesecake, I noticed, was only 6 carbs.

I make my mashed cauliflower by overcooking 3 pound bags of cauliflower and draining it extremely well. I just add a bit of dry ranch dressing to mine and whip them up very well. I made my mashed potatoes with ranch dressing so it makes it taste familiar.

I have been known to add some minced garlic or some grated cheese as well. Could add some FF cream cheese also. Bacon bits etc. I freeze the leftovers and they come out quite well. I am doing SBD so I am watching the points as well as the carbs. I have found I can eat at a higher points level on this diet than I was able on WW. I would assume that people doing the Adkin's diet could add butter.

As far as the creamed spinach goes here is my recipe.

1 package (10 ounces) frozen, chopped spinach, thawed
1/4 cup heavy cream ( I use FF cream cheese)
1/4 cup grated parmesan cheese
1 clove garlic, crushed

I made something new tonight. I had read about Zucchini Lasagna and I made my own version of it.

3 medium zucchini (sliced lengthwise)
1 car of low carb sp sauce
Lean hamburger cooked with peppers and onions and well drained

(combine these items)
1 container of ricotta cheese (LF)
2 eggs
Italian Seasonings
Mozzarella cheese

Paramasean Cheese


Spray casserole dish with Pam. Put a bit of sp sauce in bottom of dish. Put in layer of zucchini, top with gr beef mixture and cheese mixture then repeat until done.

Bake at 375 for about 30 minutes covered and then remove covering and bake another 15-30 minutes.

I add the Paramesan cheese toward the end as I have found that you can use less cheese that way.

I did not put exact amounts as I do not cook that way and it is all up to an individual's tastes. Think this would taste good with no meat as well.

I do not have any calorie or carb counts but from experience I would say it is very low in either.

It tasted very good and made about 9 huge servings. A normal person (not I) could add a salad and have a smaller serving for a very healthy, delicious and low cal meal.

I had a dear friend die the other day and have spent most of the day on the phone talking to friends but hope to find time soon to post more recipes.

Congratulations on how you are doing on your new eating plan.

I would really love to eat healthy, and most of the time I do. But I love fat and sugar too much, and they love me too.
 
I like to mix 100% baker's chocolate with chopped up dried fruit. There's no refined sugar but the dried fruit adds just enough sweetness.
 
For all of you who have been before, this is my first trip to Disney...So is it possible to maintain your low-carb lifestyle while at Disney or should I just realize for seven days it's gonna be a carb overlaod situation?

For the booze, I highly recommend The Low Carb Bartender, by Bob Skilnik.

I'll post my favorite lamb recipe (a mustard wet rub, so to speak) in another thread for organizational purposes.

Taste would be better..
But don't you think that it would contain a lot of fats in it and if you are following a diet like me then would be harmful for you..
