Question regarding excursion and dinner..

I have a 5pm excursion and a 6pm dinner.. Will I have a problem?

You will have to do dinner on your own that evening. There is always room service or the fast food places on deck 9. Or you could book Palos for later that evening.

I have kosher meals, perhaps they'll let me eat at the late seating for that 1 night?

Unforunately, no they will not allow you to eat at the later seating, since someone will be at your table. You can talk to your server about it the night before. Maybe it can be arranged to be delivered to your cabin the night you're out late.
