Bojangles or Raising Canes
My son just moved back to Louisiana from Miami for a new job (Baton Rouge). His first meal was Raising Cane's. Next meal was Monjuni's. Made me homesick for Louisiana. He wasn't much of a Whataburger fan (not into burgers too much), but I've give an arm to get one.

I would have named more places but the OP said they were looking for fast food/fast casual.

JackStack is most def. NOT that nor most of your list :)

ETA: Joe's KC BBQ (formerly Oklahoma Joe's) is fast casual bbq (but my favorite bbq place), trays, paper napkin rolls, low-key plates, get your own drink, order at counter, pick up at counter, etc. JackStack is an actual restaurant with table service.

Don't know about regional fast food but here in rural France we can only get kebabs or pizzas so when we're in the US we love Tacos, BBQ food of any description, chilli dogs, craft beer and ice cream at Two Scoops on Anna Maria.

Ooh, another one I will add is in Texas I need to hit Torchy's Tacos - they have them in Dallas but I think they started in Austin. I love them!

Roberto’s Taco Shop - a local chain in the San Diego area.

Carne asada burrito and rolled tacos with guacamole! My mouth is watering just thinking about it! I get it multiple times when I am visiting my parents and siblings who live in San Diego. I’ve lived in Virginia since college.
I find most of the 'berto places to be pretty good. Roberto’s was our go to when hubby was stationed at Camp Pendleton years ago. 😋

We have Alberto's local to us and its just like Roberto's....in fact I think I'll get some taquitos for lunch today. 😋

And even though they are throughout So Cal and one in Vegas https://originaltommys.com its still not close enough to me...lol OMG so good. So anytime we know we'll be close to one, we always plan to stop.

Here in Connecticut we have Nardelli’s for subs-we call them grinders- and several locations of Frank Pepe Pizzeria Napolatano

Do they still do the carrots and jalapenos side? I miss those...

Nandos actually started in South Africa. We would love to have one here. We really miss it.

White Castle. My wife had family in St. Louis and whenever we flew in for a visit we would pick up a sack of sliders on the way to their house from the airport. Closest one is 600 miles from home. Of course, EVERY grocery store now seems to carry both the frozen White Castle Hamburgers and Cheeseburgers.

OMGosh....how can I forget white castle?? LoL Mmmm....closest for us is Jean, NV at the WORLD'S LARGEST Chevron on the way to Vegas and then there are two locations in Vegas. We love staying at the Mirage because White Castle is right across the street.

Taquitos for lunch today? Rub it in why don’t ya! 😋

I love Super Dawg in Chicago. I've only eaten there twice but would love to have one again. Don't know if I'll ever make it back up there..
I'm a Whataburger fan, it's always nice to stop and get one when we get back to Texas after a trip.
Love Whataburger. One of the things I miss about Texas.

Another is Amy's Ice Cream. In fact, back when the wife and I were going to Austin (for her company's convention) I was already planning to hit one of the locations there.

Jolibee (Manhatten, Jacksonville)
They have a few locations in Toronto and their chicken is pretty good.

Not fast food, but the wife and kids have an obsession with the Cheesecake Factory. We tried to go to one on every non-cruise trip to the US. And we've yet to go to the Toronto location.
