Is first and last name OK, or does it need to match EXACTLY how your passport shows ( full middle name )

Use the name exactly as it appears in your passport or the ID document you will use.

While you may be able to get by without noting your middle name, there will always be a risk of being denied boarding or running into processing delays. (And if you are flying, the TSA needs the full manifest for other obvious reasons.)

The only upside to skipping the middle name is gaining a few typing seconds. Balance that against the risk of potentially being denied boarding.

Well Disney only allows me to add just the initial of the middle name anyway while booking so that answers that. I did it! The reservation shows dining second. I didn't choose anything dining related though. Can that be changed?

Yes, you can change your dining time on your reservation, as long as the other time is available. Go into your reservation and scroll until you get to the section that says dining. If the first seating is available you will be able to select that yourself. If it shows that the first seating is not available you can call DCL and asked to be put on the waitlist for first dining.
