I found a recipe that I made into a WW masterpiece. My DH co-workers ask me to make these muffins all the time. Thought I would share with my WISH WW friends. Enjoy!
1 cup mashed bananas (2 large)
1/2 cup un-sweetened applesauce
1 cup sugar
1 egg
1 teaspoon baking soda, dissolved in 1 Tablespoon cold water
1 1/2 cups WHEAT flour
1 teaspoon cinnamon
1 teaspoon vanilla
Mix applesauce and sugar, then beat in egg. Add baking soda, flour, cinnamon and vanilla until combined, then add well mashed bananas. Put batter into greased (a little cooking spray) or paper lined muffin tins. Bake @ 350 degrees for 20-22 minutes.
Weight Watchers : Each muffin is about 2 points. If you make 12 muffins out of the batter.
