Ziti with Turkey Sauce

1 ½ tablespoon olive oil
½ cup chopped onion
½ cup chopped celery
½ cup chopped carrot
1 pound mushrooms, cleaned and sliced from stem to cap
1 1.25 pound package ground turkey, 7% fat content
½ teaspoon dried oregano
¼ cup dry red wine
1 28 ounce can ground peeled tomato
1 cup chicken broth
¼ cup tomato paste
2 tablespoons chopped parsley
1 pound box dried pasta, prepared as directed
· In large pan, heat oil, add onion, celery, and carrot. Cook stirring, 2-3 minutes.
· Add turkey and oregano; cook 3-4 minutes or until turkey is no longer pink, stirring to break up meat. Add wine; cook until liquid evaporates.
· Stir in tomatoes, checken broth, tomato paste, and parsley; simmer 30 minutes, stirring occasionally.
· Toss cooked ziti in sauce to mix well. Also works well with any round tubular pasta, especially mini rigatoni.
