My family has an upcoming Disney Cruise in the early spring. My 15 year old sister and two 14 year old cousins are already looking forward to Vibe for fun activities and video games but I heard they are very strict of age limit. (14-17) I want to be with my sister and cousins. Can’t I just lie about my age that I’m 17?

No. They know your birth date (it's part of the reservation information). It's also indicated on your KTTW card that you're an adult, not a minor.

It varies. Ask when you get onboard or the easiest way is to look in the Navigator on the DCL app which will list all activities once you're onboard.
