BF's dad lives in Vegas, so we spend a lot of time there. He takes us to Silverton (at the south end of the Strip -- the WAY south end), because it's convenient to his house. Up until this year, it's just been "okay" (but heck, he was paying, so who are we to complain??).
Well, this year, we went to Silverton. The buffet has been completely renovated, and is now called "Seasons." We were so impressed! It is only $13.99 for dinner, and the selection is amazing. There is a salad bar with a variety of salads, an Italian section with a variety of pizzas, pastas, and garlic bread, an Asian section with a variety of Asian-influenced foods, an American section with things like prime rib, pork chops, turkey, gravy, mashed potatoes, macaroni and cheese, and an awesome dessert section with a gelato bar (I think I would go for that alone!) and mini-desserts (so you can eat lots of them). They also have a seafood section which had things like peel and eat shrimp, fried shrimp, and crab. The selections can vary a little (we went twice, and there were some differences, but the different sections don't change).
We thought it was an excellent value, and the food was very good. I have been recommending it to all of my Vegas-bound friends!
(OT, but I'd also like to recommend Terra Rossa in the Red Canyon Ranch Resort -- it's NW of the Strip. This is VERY good Italian food! The quality of the food and service are both excellent. It's a little pricey for some things like osso bucco ($40+), but other items like my lasagna were very reasonable ($14 or so). Apparently the chef won the Hell's Kitchen show -- I don't watch it, so I'm not familiar with it.)
