Cherry Snowballs

Serving Size : 36 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup butter -- softened
1/2 cup confectioners' sugar
1 tablespoon water
1 teaspoon vanilla extract
2 cups flour
1 cup quick-cooking oats
1/2 teaspoon salt
36 maraschino cherries
Coating
2 cups confectioners' sugar
1/4 cup milk
2 cups flaked coconut -- finely chopped

In a mixing bowl, cream butter, sugar, water and vanilla.
Combine flour, oats and salt.. Gradually add to creamed mixture.
Shape a tablespoon of dough around each cherry, forming a ball. Place 2" apart onto ungreased cookie sheets.
Bake at 350 degrees for 18-20 minutes or until bottoms are browned. Remove to wire racks to cool.
Combine sugar and enough milk to achieve smooth dipping consistency.
Dip cookies. Then roll in coconut.

Chunky Pecan Pie Bars

CRUST
1 1/2 cups all-purpose flour
1/2 cup butter -- softened
1/4 cup packed brown sugar
Filling
3 large eggs
3/4 cup corn syrup
3/4 cup sugar
2 tablespoons butter -- melted
1 teaspoon vanilla extract
11 1/2 ounces semisweet chocolate chunks
1 1/2 cups coarsely chopped pecans


Preheat oven to 350 degrees F. Grease a 9x13 inch baking pan.
Crust: Beat flour, butter and brown sugar in small mixer bowl until crumbly.
Press into prepared baking pan.
Bake for 12 to 15 minutes or until lightly browned.
Filling: Beat eggs, corn syrup, sugar, butter and vanilla extract in medium bowl with wire whisk.
Stir in chunks and nuts.
Pour evenly over baked crust.
Bake for 25 to 30 minutes or until set. Cool in pan on wire rack.

Here is the simplest of the recipes but it is fattening, easy & delicious!

Baby Eskimo

Recipe Ingredients

2 oz. Kahlua
2 Scoops Vanilla Ice Cream
8 oz. Milk
Leave ice-cream out for about 10 minutes. Add ingredients in order, stir with chopstick (butter knife or spoon works too). Consume immediately and often. Nice and light, great for following a heavy drink.

Thank you so much Lynne, you made my day. I love everything and will use everything soon. This weekend it is going to rain, so I will make some cookies with the cookie cutters. Did you get much snow this weekend? We only got about an inch, but that was too much for me in October. It actually snowed for 24 hours straight, but at first it didn't stick.

We didn't get any snow...we were at Disney! :goodvibes It was really cold here in PA, but the snow missed us...this time! We haven't had much the past few years...we're due for a doozy.

Disney was wonderful, and the treehouses were awesome. DS9 taken to urgent care on day 2... positive for H1N1. (Caught it VERY early and fever broke that night so he didn't miss out on too much.)

And I had 2 sad messages waiting for me. A great uncle died on Wednesday, and I'm going to miss the funeral. And my nephew's son was diagnosed with leukemia. They think it's the treatable kind, but are still running tests. He's only 3. :sad1

My friends were in WDW the same time you were & ended up in the "Urgent Care" with Swine Flu...Glad they treated your son so quickly.
