I've done it a few times and I think it's pretty fun. It's just like canoeing or kayaking, but you stand up. I find it's a little bit more of a workout because you don't only use your arms to paddle, but your legs and abs to balance. It's not for everyone, but if you can find it at a decent price, it's worth checking out. But if you don't like canoeing or kayaking, you probably wouldn't enjoy it any more or less.
As a tip, the first time I did it was on a lake which is an ideal place to learn because you don't really have to deal with waves or currents. The ocean is a little tricky when you have to deal with both, plus other boaters. But if you go in knowing you may fall down and may get wet, and you have a lifejacket and are a decent enough swimmer then there is nothing to worry about.
