I think you have found your answers, but here is what I would do with your itinerary/flight times. I'd stay close to the airport on Saturday night after you arrive and go to the zoo on Sunday. The zoo is very close to the airport. Parking and ticket lines will be best first thing in the morning (parking is free). We have zoo/safari park annual passes and we love the zoo (the new Africa Rocks section is really neat). I'd head out late afternoon toward Anaheim. Lots of great places to eat dinner along the coast. I'd hit up Encinitas or Carlsbad - and I'd leave enough daylight to sit on the beach for a half hour or so around sunset, as long as it isn't overcast/foggy. (As someone asked earlier, I can assure you Carlsbad is safe - lots of families live there). Then stay in Anaheim Sunday night, Disney M-Th and head back toward San Diego on Friday morning. After all that touring and walking, I'd be inclined to have a relaxing day - sleep in, have a leisurely breakfast, stroll DTD one last time, head out late morning after rush hour; get to San Diego and chill at a beach for a few hours and then head toward airport/downtown by 3:00 and stay near the airport to catch your early morning flight. The beaches are beautiful in San Diego County (again as long as May Gray isn't around that day). But the Safari Park is such a neat experience. Hit up the Africa Tram near when it starts running. Just a warning that traffic heading anywhere in San Diego after 3:00 on Friday is a pain (Safari Park is in Escondido which without traffic is about 45 min from the airport).
