What did you bake today ? OK if not from scratch

So I do the can ones because every recipe I have ever tried ends up with sort of vaguely buttery paste like bricks and I'm not sure if I'm just unlucky or if this is what a good biscuit is supposed to be. I am open to a tried and true recipe.

Also a general request, hoping for a nice soft gooey cinnamon bun, one that can almost give a joyous cinnamony toothache with a nibble. Most recipes say they have a dry flakey crust like it's a good thing, that is the opposite of what I want so I can't seem to unearth the sort we like, which might have another name.

I pulled this frozen pecan tart by Rose Levy Berenbaum out of the oven right now. It's our family compromise on pecan pie, since my husband loves it, but everyone else thinks it's too gooey and sweet. This is a thin tart, and eaten frozen, so the ratio of crust to goo is different, plus freezing kind of changes it--it's more like a chewy candy when frozen. Really pushing it to the last minute--I'll get it in the freezer by 11, my daughter is coming over at 1, and we'll eat it at 3 or so. I normally make it a day ahead at least . . . or who am I kidding. My goal is always to make it ahead, but most of the time, I'm rushing to get it in the freezer at the last minute so it will be fully frozen.

Also making Thai salad rolls with peanut dressing for an app. And fried rice and a dish called kkanpunggi (Korean Chinese style garlic fried chicken) for our main meal. The chicken dish is kind of a big deal since I have to make a quadruple recipe . . . normally would just say nope to that since it's semi deep fried, but it's a birthday request.

Dairy Free/Tree Nut Free carrot cake cupcake muffins, using a DF/TF boxed spice cake mix, fresh shredded carrot, shredded apple, golden raisins, unsweetened coconut chips, and a diced pineapple cup and its juice with the juice replacing 1/2 the water...cooked 4 minutes longer than box normally needs, and served as is (no frosting), and they are spectacular:)...all 6 folks in the house love them, and they are all the good fresh things about an awesome carrot cake with none of the dairy, nuts, denseness, or heaviness...
 
Apples were getting a touch mealy, as they do this time of year so I peeled and sliced a bunch. Next in a small pan I put about 1/2 cup brown sugar, bourbon and about 1/2-1 teaspoon of apple pie spice, made a syrup and mixed the apples with it and baked about 30 min at 350, house smelled amazing & it was yummy.

Today may be pizzelle... whoops just saw Skippy918's post so it will be a cinnamon extravaganza today :)
 
:sad2: I’m sending a meal to a family with a newborn through our church’s hospitality ministry. They listed all sorts of dietary restrictions on their request form so for the dessert I went with a banana cake mix that is gluten and dairy free. I put a streusel made of coconut, brown sugar and walnuts on top. It over-flowed the pan I used and looks like a mess, although the bit I scraped off the side tasted nice enough. I’m a little embarrassed but since the meals are provided anonymously, I tidied it up the best I could and am sending it anyway. :blush:

As for the zucchini, I’ve had better luck with bread than cookies.

:goodvibes Ha! You lost me at chickpeas but then again, I wouldn’t eat regular Buckeyes either. I hope your family enjoyed them!

I made 10 lbs. of zucchini into this last week (4 nice sized cakes) and gave them all away at my work. Although I never even got a taste, everybody said it turned out very well.

blackberry cobbler.....berries harvested five days before the Oregon fire and falling ash, so all tha remaining fruit ruined. Sister still had a large crop to harvest from her backyard fence. I frozen them in Ice cream containers and traveled to Yuma with a ice chest full of berries one block of ice, which last for a a very long time on the 4 day trip, still had the ice block arriving in 87 degree YYuma. still have some frozen berries for christmas
