Apricot Bundt Cake
Serves 12
1 94% fat-free yellow cake mix
1 1/3 cup apricot nectar
¾ egg substitute
1 tsp cinnamon
½ tsp ground nutmeg
½ c finely chopped dried apricots
Preheat oven to 350 degrees. Combine the first three ingredients in a large mixing bowl. Beat on low power for 1 minute, scraping the sides of bowl often. Beat 2 more minutes on high power. Spray a Bundt pan with nonstick cooking spray. (my cake stuck to top of pan, I would lightly dust with flour too) Pour half the batter into the pan, sprinkle the cinnamon, nutmeg, and chopped apricots over batter. Pour remaining half of batter into the pan, spread evenly with a spatula. Bake 45 mins or until the cake tests done. Cool for 20 mins (or more if needed) then turn out onto a serving plate.
