A resort view at the Dolphin would generally be the Swan, yes.Of course "resort" view would mean the resort and not the park. I'm not sure what I was thinking.
Dan - I apologize, I was not clear. We are actually staying at the Dolphin. So I guess "resort" view would be view of the Swan? Does that change your answer regarding the west wing (is that the wing closer to the parks at the Dolphin) and view of Epcot (is that possible at the Dolphin)?

Same for the Dolphin, west is closer to the pools, east closer to the central core area and getting out to the parks. In any case, at the Dolphin, if you are east or west, and going elsewhere in the hotel, it could be a lot of walking.
