I love the suggestion for a split stay- best of all worlds!
There are several ways to get to and/from the Beach Club and Magic Kingdom. My family and friend's typical route is to take the bus to the MK in the morning- 15-20 min ride plus any wait time and then to return to the resort via Monorail to EPCOT, mostly because we enjoy the ride (the Monorail is TOO a ride) and enjoying a few attractions or food options along the way.

I think there are plenty of food options, depending on what your plans and food preferences are.
There are a few breakfast options open at and near the resort- BC Marketplace (now serving Mickey waffles!), YC Ale & Compass Marketplace and the Boardwalk Bakery and options at the Swalfin a short walk away.
I love the international options, counter service and table service, available a few steps away at EPCOT. The bakery in France is open for breakfast when EPCOT opens in the morning.
Lunch options at the BC and YC Marketplaces are mostly sandwiches, flatbreads and salads.
Hurricane Hannas at the pool has sandwiches, salads, burgers and chicken nuggets. The kids meals are served with a sandpail and shovels for the kids to use at Stormalong Bay.
Sit down, but casual meals can/will be found at the Captain's Grille restaurant at the YC and the lounges- Crews Cup and the lounge at Ale & Compass.
And of course, as you mention, we have a majority of our meals at favorite dining spots at the theme park.
