Pumpkin Crunch Cake

Serving Size : 1 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
29 ounces pumpkin
1 can sweetened condensed milk
1 cup sugar
2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon cloves
3 eggs
1 package yellow cake mix
1 cup chopped pecans
1 cup butter or margarine -- melted

Line a 13x9" baking pan with waxed paper.
Mix together the first 7 ingredients. Pour into prepared pan.
Sprinkle cake mix over mixture in pan. Sprinkle pecans over top. Pour melted butter over all.
Bake at 350 degrees for 1 hour. Let set 5-10 minutes. Flip pan over onto tray for serving.
Serve with Cool Whip or whipped cream.

Almond Joy Bars

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup shortening
3 tablespoons cocoa
3 eggs
1 1/4 cups sugar
1 cup flour
14 ounces sweetened condensed milk
2 cups flaked coconut
1/2 cup sliced almonds
2 ounces unsweetened chocolate -- melted
3 cups confectioners' sugar
1/3 cup cream OR milk
1/4 cup butter -- softened
1/4 teaspoon salt
1 teaspoon vanilla

Combine shortening, cocoa, eggs, sugar and flour.
Spread in 13x9" baking pan.
Bake at 350 degrees for 20 minutes.
Stir together sweetened condensed milk, coconut and almonds.
Spread over partially baked, hot crust.
Return to oven for 15 minutes more. Let cool.
Combine chocolate, confectioners' sugar, cream, butter, salt and vanilla. Beat until smooth.
Spread over cooled bars.

Scones (I have never tried to make these, but I will now, I always thought that they were very time consuming, but not this recipe).

Lemon Bars (I love ANYTHING Lemon).

All of these recipes were put together in a nice/cute booklet for me with Mickey and a Gingerbread man on the front.

Also included were:
Black cat and witch towel set.
Wilton Cookie cutter set with a pumpkin, ghost and black cat.
Yankee Candle tarts in Spiced Pumpkin and Vanilla Cookie (they both smell so good, I can't wait to use these).
Wilton Cupcake kit with cupcake liners and pumpkin picks (I have never seen these before).
A beautiful apple kitchen towel set.

Thank you so much Lynne, you made my day. I love everything and will use everything soon. This weekend it is going to rain, so I will make some cookies with the cookie cutters. Did you get much snow this weekend? We only got about an inch, but that was too much for me in October. It actually snowed for 24 hours straight, but at first it didn't stick.

I'm glad you liked the exchange. I had fun picking out the towels & I couldn't resist the little scrubber.

Those are some of my all time favorite recipes, especially the clam chowder & the taco soup. Great to warm you up on a winter day.
