Cherry Snowballs

Serving Size : 36 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup butter -- softened
1/2 cup confectioners' sugar
1 tablespoon water
1 teaspoon vanilla extract
2 cups flour
1 cup quick-cooking oats
1/2 teaspoon salt
36 maraschino cherries
Coating
2 cups confectioners' sugar
1/4 cup milk
2 cups flaked coconut -- finely chopped

In a mixing bowl, cream butter, sugar, water and vanilla.
Combine flour, oats and salt.. Gradually add to creamed mixture.
Shape a tablespoon of dough around each cherry, forming a ball. Place 2" apart onto ungreased cookie sheets.
Bake at 350 degrees for 18-20 minutes or until bottoms are browned. Remove to wire racks to cool.
Combine sugar and enough milk to achieve smooth dipping consistency.
Dip cookies. Then roll in coconut.

Cranberry Decadent Cookies

Amount Measure Ingredient -- Preparation Method

1/4 cup all-purpose flour
1/4 cup cocoa powder
1 teaspoon cinnamon
1/8 teaspoon baking powder
6 tablespoons butter -- softened
1/2 cup sugar
2 large eggs
8 ounces semi-sweet chocolate -- chopped
2 cups white chocolate chips -- divided
1 cup dried cranberries
1 pinch salt

Preheat oven to 350º F. Grease large cookie sheets.
Melt semi-sweet chocolate over low heat in the top of a double boiler or in the microwave (at 50% power) and cool. Combine dry ingredients: flour, cocoa, cinnamon, baking powder and salt. In a large bowl, cream butter.
Add sugar and beat until light and fluffy. Add eggs and beat until smooth. Stir in melted chocolate.
Add dry ingredients and mix well.
Fold in 1 cup white chocolate chips and the dried cranberries.
If dough feels very soft or wet, chill for 10 minutes.
Drop by teaspoons on to greased cookie sheets.
Bake until cookies look dry and cracked but still feel soft when pressed lightly, about 8 minutes. Remove from oven and let stand on sheets 3 minutes. Remove to rack and let cool completely.
Place 1 cup white chocolate chips in a microwaveable bowl. Microwave on medium (50%) power for 30 seconds. Stir.
Continue microwaving for 10 seconds and stir again. Repeat just until white chocolate is melted. Scrape melted white chocolate into a ziplock baggie.
With a sharp scissors, snip off a very small corner of the baggie.
Drizzle top of cookies with zig-zags of melted white chocolate. Cool until chocolate is set.

Nanaimo Bars - Old Recipe

Amount Measure Ingredient -- Preparation Method

Bottom Layer
1/2 cup butter
1/4 cup sugar
1/3 cup cocoa powder
1 egg -- beaten
1 3/4 cups graham cracker crumbs
1/2 cup nuts -- finely chopped
1 cup shredded coconut
Middle Layer
1/2 cup butter
3 tablespoons light cream
2 tablespoons custard powder -- *
2 cups icing sugar
Top Layer
4 ounces semisweet chocolate
2 tablespoons butter

Bottom Layer: In double boiler, melt butter, sugar and cocoa. Add egg and cook until thickened. Add crumbs, nuts and coconut.
Press into ungreased 9 inch square pan.
Middle Layer: Beat together butter, cream, custard powder and sugar. Spread over base. Chill.
Top Layer: Melt chocolate with butter. Cool slightly. Pour over second layer. Chill. Cut into bars.


NOTES : Custard powder can be found in the baking section of Canadian supermarkets. I have seen the substitution of instant vanilla pudding or instant vanilla pudding powder in American cookbooks.

Just got back from my vacation and had a package waiting for me - thanks Cindy (clhcpaca) :goodvibes

In it were two cookbooks - one was compiled of recipes from the Gilroy Women's University Club (with Cindy's favorites marked) and the other was a stuffing/dressing cookbook.

My goodies included an autumn hand towel, a wooden turkey with starlight mints, coffee beans, hand cream, Gilroy garlic, a Yankee Candle votive holder with a votive candle, a heart-shaped cookie cutter, a spaghetti measuring stick and lots of other kitchen goodies.

Reindeer on a Stick

1 tube refrigerated sugar cookie dough -- (18 ounces)
2/3 cup flour
3 inch round cookie cutter
Yellow sprinkles
2 bags DOVE® Milk Chocolate Gifts -- (11 ounces) unwrapped
1 bag M&M'S® Brand Milk Chocolate Candies for
the Holidays -- (14 ounces)
1 bag DOVE® Dark Chocolate Gifts -- (11 ounces) unwrapped
Snowflake sprinkles
48 mini pretzel twists
Wax paper
1 tube white decorative frosting
Red and green curling ribbon
Craft sticks

Preheat oven to 350 degrees.
Knead the sugar cookie dough with the flour until smooth.
Roll it to 1/4-inch thickness.
Press out 24 cookie rounds with the cookie cutter. Transfer the circles to an ungreased cookie sheet.
Break the top curves of the pretzel twists to resemble antlers. Then press 2 pretzels at the top of each cookie circle and one craft stick at the bottom.
Bake the cookies for 12-14 minutes, or until golden. Let them cool on a wire rack.
Melt the DOVE® Milk Chocolate Gifts in the microwave for 1-3 minutes, stirring occasionally until smooth.
Spread a spoonful of chocolate over each cookie and pretzel.
Sprinkle the yellow sprinkles over the antlers and the snowflake sprinkles in between the antlers as the hair.
Place a DOVE® Dark Chocolate Gift into the middle of each cookie and then place it on a wax paper-lined cookie sheet.
Chill in the refrigerator until the chocolate is hardened, about 15 minutes.
Attach the M&M'S® Brand Milk Chocolate Candies for the Holidays to the DOVE® Dark Chocolate Gifts for the eyes and nose with decorative icing. Tie a ribbon into a bow at the bottom of the reindeer's head.
