I need a good frosting recipe

I made a batch of sugar cookie cutouts tonight and am in the need of a good frosting to use on them. I can't seem to find one that will not get runny.

I always use the Wilton royal icing recipe. I divide the batch up and tint it whatever color I need. I thin it down a little more for covering the cookies and leave some a little thicker for details and outlining

The recipe says 6Tbs of water but I add much more than that. I add 1Tbs at a time and let the mixer work. Once i have something thick like greek yogurt I put a spoonful in my piping bag and test it out to see if it's right. Once I have the piping thickness right I remove about half the icing from the mixer and cover it well and then I add a little more water to the rest of the icing. It needs to be a touch thinner to cover the cookies. I will sometimes use a spoon to cover the cookies. Other times I pipe it and get one of the kids to smooth the icing with the back of a spoon. Let it dry completely and come back and pipe your details.

You can see in the last 2 the icing is a little too thin. Next time maybe I will just "glue" candies on.
 
I use the Wilton royal icing recipe, too! Watered down a bit more than it calls for. Makes for very yummy cookies!!!:goodvibes

Thank you for asking, because I need a good recipe too. I have both and will try one now and make the other this winter.

I made 3 dozen chocolate chip cookies 2 days ago and they are gone. Thanks goodness now they have these to eat up. There's about 5 doz cut sugar cookies. The kids will have a good time icing them.

What kind of brushes do you use? Should I just go to the store and look at the baking sheet aisle and see what they have? The only brush I have is a pastry brush I use for melted butter, milk, and egg washes.
 


I don't use a brush at all. I use a spoon and spoon some icing on to the cookie and use the back of the spoon to smooth it out. I let it dry and then I use a piping bag and outline the cookies with a thicker icing and add details.
 
I'll use the spoon then. Much cheaper.;)

You couldn't possibly tell that I'm new to this icing stuff. Before I would get the cake frosting at the store and have my kids frost as they eat. :rotfl2:
As the kids get older they want to do real baking and no shortcuts. I can't wait until they can take over this job completely.
