When do they take the Christmas decor down?

When do they take Christmas decor down from the resorts/the parks? Is it the day after Christmas, or NY? If we went first week of Jan?

They usually start around January 3rd but it does take some time. That first week of Jan should be able to catch the important stuff.

Resort decorations usually come down about Jan 4-5 (everything disappears overnight) and parks usually begin after that and take a few days to complete. Weather can have an impact. We were there January 2010 when the decorations were left up until mid-Jan because Orlando had one of its coldest number of consecutive days in history when day time temps seldon hit 50 and nights got below freezing.
