This is incredibly high in calories and not especially good for you, but I only make it on special occasions. It's my kids' favorite, from a local restaurant:

Theresa's Sweet Chili Linguine
1 pound pasta (even though the recipe has linguine in the title, I think fettucine works best)
1 pint heavy cream
5 oz sweet chili sauce
3/4 cup grated parmesan cheese
12 oz. boneless skinless chicken breast
Olive oil
Spice mix (I prefer a cajun mix like Tony Chachere's)
Parsley

Cook the pasta according to package directions.
Warm the cream in a saucepan, then add the chili sauce.
Gradually add the parmesan cheese a little at a time, stirring to ensure it melts into the sauce. Keep warm.
While the pasta is cooking, dry the chicken breast and sprinkle both sides liberally with the spice mix.
Drizzle some olive oil in a skillet heated to medium hot and cook the chicken breast approximately 5 minutes/side.
Let the chicken breast rest for a couple of minutes before slicing in 1/2 inch thick pieces against the grain.
Plate the meal by making a bed of pasta , placing the chicken on it, ladeling the sauce over all and garnishing with a little extra parmesan cheese and some chopped parsley.

Serves 4.

Here is the one I used tonight and then is another chili recipe that is one of our favorites. I don't add beans, but they are both good with or without them.

Turkey Chili

Amount Measure Ingredient -- Preparation Method

2 1/2 pounds ground turkey
2 palms chili powder
2 palms steak seasoning -- Montreal
1 palm cumin
1/8 cup Worcestershire sauce
hot sauce -- to taste
1 green bell pepper -- chopped
1 red bell pepper -- chopped
1 onion -- chopped
1/2 bottle beer or stock
15 ounces tomato sauce
1/4 cup hickory BBQ sauce

Brown meat.
Add seasonings.
Add vegetables. Saute 5-7 minutes.
Add liquids.
Simmer 1 hour on low.

Smoky Sausage Chili

1 pound ground beef
1 large onion -- coarsely chopped
2 teaspoons chili powder
2 teaspoons ground cumin
1/2 pound smoked sausage -- sliced 1/4" thick
16 ounces red kidney beans -- drained
1 cup picante sauce
1 cup V-8® vegetable juice
8 ounces tomato sauce
Toppings
sour cream
Cheddar cheese -- shredded
avocado -- diced

Brown beef with onion in large saucepan. Drain.
Sprinkle chili powder and cumin over meat. Cook and stir 1 minute.
Add remaining ingredients except toppings. Bring to a boil. Reduce heat. Simmer uncovered 20 minutes, stirring occasionally.
Ladle soup into bowls. Top as desired.
 
Yummy recipes! I'm particularly excited to make the sweet chili pasta! I could sub in a little cream cheese that I have for the cream and make it tomorrow. I'm planning salmon with a different recipe, but now I'm thinking this would be good with salmon.

Here's my usual salmon rub: 2 t chili powder, 2 t brown sugar, 1 t cumin, dash of salt and pepper. Drizzle salmon with olive oil and cover with rub.

Salmon was on sale at Costco last month so I'm stocked up. I haven't been to the store for two weeks so I'm starting to get a bit creative. My DH, whose schedule has been disrupted due to working at home and is really showing his Sheldon Cooper, was flummoxed tonight by the fact that I served beans as a side dish to fajitas. Apparently, I usually serve beans with tacos, not with fajitas. Seriously??? I'm planning a shopping trip next week, but I have a feeling he hasn't seen creative yet!
 
They look really good, but I can’t deal with recipes. 😬 We had shrimp scampi w butter and garlic (frozen, from Aldi’s - very good) over spaghetti. And chocolate Bundt cake for dessert. We ate outside, it was a little chilly but nice and still a little sunny.
 


Today's plan is to clean the back yard. I get tables, chairs and storage wipe down and cleaning.....also the grill.
DH gets to clean the pool and trip the palm trees.
Then weed pulling.....we have this section that has so many shoots from the pods the palm tree drops. Yard service has been trying to kill them for 6 months.......but they don't just pull them up. I am sick of looking at it, so I will start pulling.

Dinner will be pasta sauce (home made) with edamame noodles and green salad.
 
My plan for the day is to hit Walmart ini a few minutes for the necessities we need. Then come home and do laundry. It's dumping down rain (Western MD and we had a thunderstorm at 6 am--in March???), so the rest of the day may end up with me just being a couch potato and catching up on stuff on the tivo. Still haven't watched Frozen 2, so may get around to that one. No office work for hubby today, so I don't have to spend the day listening to him on speaker phone with the office or with any of his workers--hurray! Need to figure out something for dinner too, tired of cooking, but don't want to go out in the rain to get takeout, lol
 
Great recipes, thanks for sharing! We had take out from our favorite small local mexican restaurant last night. Not picking up from places often but definitely trying to from some of our smaller local places that we used to frequent. We want to support them and be able to give them a healthier tip than normal just to let them know we are pulling for them.

Tonight we are going to grill some olive burgers and have some roasted veggies.

Plan to get some taxes done today and a couple of other things at the desk before getting some time outside sweeping and cleaning up a little.
 


Last night we had Sausage & Peppers for dinner and I tried to make a crumb cake. Had the cake recipe for years but never made it. I was cleaning out my recipe folder and found it and decided to make it. It came out pretty good! Takes a whole pound of butter for the crumbs so won't be make often LOL!

I don't like red sauce in my S&P, I just roast whole sausage (sweet and hot) in a roasting pan for about 25 minutes with some olive oil and Italian seasoning, garlic, salt and pepper. Take out put to the side to cool. Then I throw the cut up peppers (any variety) and onions (Spanish or Bermuda) in the same roasting pan and cook them for about 30 minutes. I slice the sausage and add that to the pepper/onion and continue cooking until the peppers are soft. I will season more if it needs it. Last night I served it over egg noodles but you can use rice or no carb at all.

Today I am making a quiche with leftover bacon and veggies. I really want to practice making homemade pie crust. I always bake from scratch except pie crusts. I love the refrigerated pie crusts but always felt like I was cheating by not make my own!!

Parmesan Pork Chops for an old favorite - but apparently mine are always WAY thicker. I pan fry for a few minutes on each side, then finish in the oven (350 for 20-30min) - otherwise, they're burned to a crisp if I try to get them cooked completely in the pan.

Tonight - chicken pot pie (no cream-of-whatever soup, I make my own base), to use up the random leftover chicken from meals this week. Just need to make stock & pie crust (I do a double batch of both and freeze for busier weeks in the future...).

We are on the Shore and it came thru around 9 AM - I saw places like Oakland & Savage were going to be warmer than we are 4 hours east!

I cannot wait until we have nice enough weather to eat outside. I still have my patio furniture covered because it has been so cold and rainy the past month. Eating outside is going to be such a nice change of pace, I hope we get there soon!!!!

Friday night we got carry out pizza. Local shop had a 50% deal on pizza with an online order plus curbside pick up.

Tonight is turkey burgers. At the start of this home arrest, I made a double batch and froze them. I altered the recipe to make it WW friendly.
  • 1 pound ground lean chicken (I use 99% fat free turkey)
  • 1 egg
  • 1 teaspoon garlic powder (I omit)
  • 1 teaspoon tarragon
  • 1 teaspoon pepper
  • 1 1/2 to 2 ounces crumbed non or low-fat feta cheese
  • 1 large handful spinach, chopped
  • 1 teaspoon Olive oil (for frying) (I use spray olive oil)
  1. In a large bowl, add all ingredients except for the olive oil and combine until well incorporated.
  2. Preheat a non-stick pan on medium high heat.
  3. Depending on how lean your chicken is, you may need to add a bit of Olive Oil to the pan.
  4. Add patties and cook until both sides are browned and chicken is cooked to an internal temperature of 160 degrees F.
It is dark and gloomy and pouring rain here on the eastern shore of Maryland. I guess all the chalked walks will be gone.
 
Home from Walmart and surprisingly, they were not that busy, and pretty well stocked. At 10:30 on a Saturday morning. They had plenty of TP, paper towels, bleach, kleenex etc. Only things they were out of were disinfecting wipes and hand sanitizer. Freezer cases were stocked (compared to last weekend when it looked like they were all out of order they were so empty). I got everything on my list and then some. Stopped at Aldi's,,where it was pretty empty. People were observing the 6 foot rule at the registers, and everyone was in a fairly good mood. We have enough food in the house (and for the fur babies) for probably a month now, except for milk and dairy products. So it was a good trip for a change!
We have decided on chicken burgers, home made coleslaw and maybe air fryer fries for dinner tonite. Trying to plan meals ahead, but hubby never knows what he wants or feels like till that morning, lol
Have a good Saturday afternoon everyone--rain has stopped here for now, temp is up to 57.
 
I'll be going to Walmart on Tuesday.....during senior hour. So hope they have the things I need.....and my list keeps growing
If it wasn't so early in the morning, I would probably try it at Walmart. Our local Martins stores (Giant), do the senior hour every day from 6-7, but I'm not getting up that early just to fight the crowds. I found the stores to be a lot more well stocked than they were last weekend. And not crowded at all, and there were plenty of 'Seniors' there ( I was one of them, lol!) I hope you can find everything you need!

It's stormy here and humid in Indiana today. I swear all this pandemic stuff is going to turn me into germaphobe and hypochondriac. We went to ATM and I was wiping it all down before touching it and then wiping my hands and card before touching anything else in the car and then washing my hands at home. This too much for the country girl who'd pick things off the tree and eat it or probably ate a lot of dirt in her time.

I didn't make shrimp tacos last night so spicy shrimp tacos for tonight with pineapple coleslaw and avocado salad on the side.

Here's a weird note....my Matt got an email asking about interest going back to active duty. I'm like asking can we say no?? Is this going to be a thing I have to worry about and how the hell does this work with him being retired. Beyond my control and I can't worry about it. I'm too worried trying not to touch the buttons at the ATM and then pissed off that I'm worried about touching the buttons at the ATM.

So how's everyone else doing? I feel like I'm boring ya'll with the dear diary of the Matt and Tina show.

3 things I'm thankful for today:

1. My deployment exeperience. I feel all that time of waiting and worrying has prepped for me be able to put my head down and just get through this.
2. The post office people. I needed to mail my mom and her roommate a goody box with this, that and the other and I'm glad that they still making things happen so I could get something to her.
3. Normal everyday boring people. I like normal everyday people who are doing the best they can and not trying to bring the world down with them right now.
 
Yesterday's dinner was bangers and mash, with peas, of course.

I think today might be home baked mac & cheese.

The kids went to the local drive thru taco place and picked up lunch. I had a fish taco and fried pickles. Everyone else ordered a shake and now I regret not asking for one.
 
Question of the day 3/28: What's a movie you watch that brings you comfort?

I have ton of movies that I watch for comfort but one of my favorite series is the Tammy movies. The original movie has Leslie Nelson and Debbie Reynolds. I love those movies and will probably break them out soon. Tonight is going to be a comedy I think with some fresh popped popcorn.
 
So how's everyone else doing?

Sorta bored -- everyday is just a repeat, but that's sorta the life with an 11 week old during a pandemic? Lol. I'm actually considering getting Animal Crossing for myself just so I have a change. I can't really get back into my usual hobbies due to baby care.

Question of the day 3/28: What's a movie you watch that brings you comfort?

The Harry Potter movies bring me a lot of joy and comfort. Aside from those, Paranorman is a fav of mine.
